From Oaxaca with Flavor: Introducing Tomonotomo

Meet Tomonotomo: Mexico’s First All-Natural, Non-Alcoholic Agave Spirit

When bartender-turned-founder Amanda Chen moved to Oaxaca during the pandemic, she didn’t expect to create a new category of non-alcoholic spirits. But after years behind the bar, she noticed a gap that bothered her. The “mocktails” on menus often felt like afterthoughts—sugary mixes or flavored waters without substance, ritual, or craft. For Amanda, who wanted to embrace moments of sobriety without giving up the beauty of the drinking experience, nothing out there measured up.

So she set out to make it herself.

What Makes Tomonotomo Unique

The result is Tomonotomo: the world’s first distilled non-alcoholic agave spirit made in Oaxaca, Mexico. More than just an alcohol-free alternative, Tomonotomo captures the soul of mezcal—its smokiness, complexity, and ritual—without the buzz.

Authentic Production Methods in Oaxaca

Unlike many non-alcoholic spirits that rely on flavor extracts or hydrosols, Tomonotomo goes through a true distillation process. Wild Tobala agave is roasted in traditional earthen pit ovens, fermented, and distilled through copper stills custom-built in Ocotlán. The process ensures not only authenticity but also a weighty mouthfeel that lingers on the palate, something often missing in alcohol-free options.

The Flavor Profile: Agave Meets Botanicals

But what really sets Tomonotomo apart is its Oaxacan pantry of botanicals. Amanda layers the roasted agave base with smoked pineapple, pulque reduction, ginger, pasilla mixe chili, flor de cacao, poleo, chamomile, cardamom, hibiscus, rose petals, lemongrass, and more. Each ingredient is carefully chosen and distilled in harmony, creating a complex, savory, and slightly spicy profile that unfolds sip after sip. It’s not just an imitation of mezcal—it’s an entirely new experience.

Preserving the Ritual of Drinking

Amanda often says her goal was never to mimic alcohol, but to preserve the ritual of drinking. The clink of a glass, the swirl of liquid, the smoky aroma rising to meet you—Tomonotomo restores all of that. “Too often people who choose not to drink are excluded from these moments,” she explains. “Tomonotomo is something you’d choose whether or not you drink. It’s not a consolation prize—it’s a premium spirit in its own right.”

Awards and Recognition for Tomonotomo

And the world is taking notice. Tomonotomo has already been named Best Non-Alcoholic Spirit by BevNET and took home Non-Alcoholic Agave of the Year at the International NA Spirits Competition. Bartenders are embracing it as a cocktail staple, and in some bars, non-alcoholic versions of mezcal cocktails made with Tomonotomo have outsold their boozy counterparts.

How to Enjoy Tomonotomo

For the sober curious, seasoned mezcal lovers, or simply anyone looking to discover something new, Tomonotomo is an invitation to savor. Sip it neat over ice to taste Oaxaca in its purest form, or mix it into your favorite cocktail for a smoky, layered twist.
At Boisson, we’re thrilled to bring Amanda’s vision to our community. Tomonotomo isn’t just another addition to the non-alcoholic shelf—it’s a redefinition of what non-alcoholic spirits can be: bold, complex, and crafted with care from start to finish.
