Dealcoholized wine starts as a traditional wine that goes through normal fermentation, developing alcohol, flavors, and structure just like any other bottle. After fermentation, the alcohol is removed using methods such as vacuum distillation, spinning cone columns, or reverse osmosis. The result is a beverage that retains much of the original wine’s flavor compounds, acidity, and mouthfeel, but with less than 0.5% alcohol by volume. It is, in essence, wine with the alcohol taken out, designed to taste as close as possible to the original wine style.

Proxies, by contrast, are wine alternatives rather than dealcoholized wine. They are crafted from the ground up using blends of ingredients like teas, verjus (unfermented grape juice), fruits, spices, herbs, and botanicals to evoke the complexity, acidity, and texture of wine—without ever going through fermentation. Because they aren’t bound by traditional winemaking processes, proxies can be more experimental and flavor-driven, leaning into pairability with food and offering layered, non-alcoholic beverages that don’t necessarily try to mimic wine exactly but instead create a wine-like experience.
